A Refreshing Tomato, Feta and Mint Salad to Celebrate Summer's Bounty

Summer shines brightly with an array of fresh produce, and tomatoes are one of the standout stars. Their vibrant colours and juicy textures remind us of sun-soaked gardens and the aromatic smell takes me back to summer visits exploring my Granddads green house. This Tomato, Feta, and Mint Salad beautifully showcases summer's offerings by blending sweet, large tomatoes and arm cherry tomatoes, blistered in a pan with tangy feta and fragrant mint. It is a delicious way to celebrate the season and create cherished memories with family and friends.

Tomato, Feta and Mint Salad - The Recipe


Ingredients


To prepare this refreshing salad, gather the following ingredients:


  • 2 large tomatoes, thinly sliced

  • 1 red onion thinly sliced and broken into rings

  • 1 tsp sea salt flakes

  • ½ tsp caster sugar

  • 3 tbsp red wine vinegar

  • 4 tbsp extra virgin olive oil

  • 1 pack of feta cheese, chopped into chunks

  • 5 cloves garlic, peeled thinly sliced

  • 250g cherry tomatoes on the vine

  • 4 sprigs mint, leaves picked and roughly chopped

  • Crusty bread, to serve (optional)


Method


  • Thinly slice the large tomatoes and arrange them on a large serving platter. Separate the sliced red onion into rings and scatter half over the tomatoes, keeping the rest aside. Sprinkle the sliced tomatoes and shallot with salt and sugar, then drizzle with red wine vinegar.

  • Heat the oil in a large frying pan, then add the feta, sliced garlic and the remaining red onion; fry for 2 minutes

  • Removed from the hit and arrange over the sliced tomatoes. Tip the cherry tomatoes into the pan, fry until their skins split, then pour the mixture, with all the juices, over the sliced tomatoes and cheese. Sprinkle over the mint and serve with crusty bread, if liked.
