After a long day, we all want a meal that is both satisfying and simple to make. That's where Creamy Green Chilli Chicken comes in—a delightful dish that combines juicy chicken thighs with a rich, creamy sauce that has just a warming hint of spice. Perfect for those cosy nights, this recipe will impress your family or guests without requiring hours of prep.

Creamy Green Chilli Chicken - The Recipe


Ingredients


  • 2 tbsp butter

  • 6 chicken thighs, bone-in for added flavour

  • 2 pinches of sea salt

  • 1 tbsp garlic Italian seasoning

  • 100ml white wine (adjustable to personal preference)

  • 300ml chicken stock

  • 300ml double cream

  • 1 tbsp Italian seasoning

  • 3 heaped tsp green chilli paste or 8 whole green peppers in brine, finely chopped

  • Handful of fresh dill


Method


Preparing the Chicken

Preheat the oven to 200C/400C


Begin by melting the butter in a large oven proof skillet over medium heat. Once it’s bubbling,  season the chicken thighs with a couple of pinches of sea salt and sprinkle garlic Italian seasoning generously over the top, and place the chicken thighs in the pan, skin-side down.


Cook the chicken for around 5 minutes, allowing the skin to get golden and crispy. This golden crust adds essential flavour to the dish.


After browning, flip the chicken and cook it for another 5 minutes, ensuring the meat is seared and locking in the juices.


Once the chicken is beautifully browned, remove from the pan and set aside. Pour the white wine into the skillet and use a spatula to scrape up any flavourful bits stuck to the bottom.


Next, add the chicken stock and bring everything to a gentle simmer. Let it cook for about 10 minutes.


Lower the heat and stir in the double cream, and mix in your green chilli paste or finely chopped green peppers. If you like it spicy, don’t hesitate to increase the amount. Stir in the dill, reserving some for garnish. Add a pinch of sea salt to season.


With the sauce well combined, return the chicken to the skillet. Place the skillet in the oven and cook for 15 to 20 minutes, until the chicken thigh are cooked through.


Serving Suggestions


Creamy Green Chilli Chicken shines when paired with pasta, allowing the sauce to cling to every noodle, creating a delicious experience. Alternatively, serving it with new potatoes gives a heartier option perfect for cool nights.
