Paprika Sweetcorn Rice Bowl - The Recipe
To whip up this colourful rice bowl, gather the following ingredients:
1 Pack of microwavable Basmati rice, cooked as per pack instructions
1 can (15 oz) sweetcorn, drained
50g butter (about 3.5 tablespoons)
2 teaspoons sweet paprika
2 garlic cloves, finely chopped
Mixed salad greens
1 ripe avocado, sliced
100g crumbled feta (about 1 cup)
Pot of hummus
Handful of cherry tomatoes, quartered
1/4 cucumber, chopped into chunks
Pinch of flaky sea salt
30mls red wine vinegar
Fresh herbs (such as parsley or dill, for garnish)
Pita chips, pita bread, or naan for serving
Method
Begin by mixing your cucumbers and tomatoes together in a bowl. Add a large pinch of flaky sea salt (sea salt is milder in flavour, table salt will be far too salty). Add in your herbs and pour in the red wine vinegar. Allow to marinate slightly whilst you prepare the other ingredients.
Cooking your Basmati rice according to the package instructions. Basmati rice is celebrated for its fluffy texture and aromatic qualities, making it an excellent base for this rice bowl. Once the rice is cooked, let it sit for a few minutes to cool slightly.
In a large skillet, melt the butter over medium heat. Add the finely chopped garlic and sauté for about one minute, until fragrant, do not allow to colour. Stir in the sweet paprika, letting it flavour the melted butter.
Once the garlic is aromatic, add the drained sweetcorn to the skillet. Cook for an additional 4 to 5 minutes, stirring occasionally to allow the corn to heat through.
