Elegant Vegan Asparagus and Butter Bean Soup: A Budget-Friendly Recipe to Savour

Creating delicious meals on a budget doesn’t have to be complicated. This week, I’ve turned my focus to elegant vegetarian and vegan dishes that let fresh produce shine. One standout is the deliciously creamy Vegan Asparagus and Butter Bean Soup. With just a few ingredients, this soup is not only easy to make but also brimming with flavour and health benefits.

Vegan Asparagus and Butter Bean Soup The Recipe


For this elegant soup, gather the following ingredients:


  • 2 bunches of fresh asparagus, with woody ends trimmed off

  • 1 tin of butter beans (approximately 400g), drained

  • 300mls of vegetable stock

  • A generous handful of fresh dill (about 20g)



Preparing the Asparagus


Begin by prepping your asparagus. Trim off the woody ends, which can be tough. A handy tip is to bend the asparagus gently until it snaps; it will break at the right point naturally.


After trimming, rinse the asparagus under cold water to ensure it's clean. Cut in half so it fits in the sauce pan.


Heat a large sauce pan of salted water until boiling. Carefully add the asparagus and cook until tender about 3 to 4 minutes. Drain and reserve a few of the asparagus tips for garnishing.


Tip the asparagus into a blender with the butter beans and fresh dill, then blend until smooth, add vegetable stock a little at a time, blending until you reach your desired consistency.


Tip soup back into the sauce pan and gently warm through, check for seasoning.


Serve your elegant asparagus and butter bean soup in warm bowls, garnished with a sprig of fresh dill. For a final touch, drizzle a little olive oil.
