Honey and Chipotle Steak - The Recipe


Ingredients:


  • 1 Thick Cut Bone-in Sirloin Steak (approximately 2-3 pounds)

  • ⅓ medium yellow onion, diced

  • 5 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1 tablespoon honey

  • 2 tablespoons + 2 teaspoons adobo sauce from canned chipotle peppers

  • 1 tablespoon ancho chili pepper

  • 2¼ teaspoons kosher salt, plus more for finishing (Diamond Crystal)

  • 1½ teaspoons ground cumin

  • 1½ teaspoons dried oregano

  • ½ teaspoon coarsely ground black pepper



Method:


In a blender, combine the olive oil, minced garlic, diced onion, honey, chipotle adobo sauce, ancho chili pepper, kosher salt, cumin, oregano, and black pepper. Blend thoroughly until all components are well-blended, forming a smooth marinade.


Once the marinade is ready, place the thick-cut bone-in sirloin steak into a large resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring that it covers the meat completely. Seal the bag tightly (or cover the dish) and refrigerate for at least 2 hours, but ideally overnight.



Marinating steak rib with a rich, dark glaze on a white plate, set on a wooden table. Juicy and inviting with a bite taken.


Preheat oven to 190°C/Fan 180°C/Gas 7.


Preheat frying pan to a high heat. Place steak in pan and sear both sides for 5 minutes. Transfer steak from the pan into a pre-heated roasting dish and place on the middle shelf of the oven. Cooking times for rare 22 minutes, for medium 26 minutes and for well done 32 minutes, turning halfway through. After cooking: Remove from the oven and allow to rest for 10 minutes before serving. This product should be cooked until piping hot throughout.


After resting, slice the steak against the grain into thick pieces. Serve with a sprinkle of kosher salt for finishing, and pair it with your favourite sides. Roasted vegetables, a fresh salad, such as my Cowboy Caviar
