What are Flamenco Eggs?
Flamenco Eggs, or "Huevos a la Flamenca," originate from the Andalusian region in Spain. This comforting dish typically features a zesty tomato base with eggs baked in, providing a hearty meal that is both satisfying and flavourful. The combination of vibrant colours and aromatic spices makes Flamenco Eggs a feast for the senses, often chosen for brunch or an elegant lunch. In fact, a plate of Flamenco Eggs can evoke the warmth of Spanish sun.
Flamenco Eggs - The Recipe
Ingredients
Olive Oil
1 Small Onion
1 Clove Garlic, Chopped
4 Slices Serrano Ham, Chopped
2 x 400g Cans of chopped tomatoes
1 tbsp Red Wine Vinegar
75g Peas, Frozen
1 tsp runny honey
4 Eggs
20 Slices Chorizo Sausage
1 Large Roasted Pepper from a Jar, Cut into Strips
Salt and Freshly Ground Black Pepper
Small Handful Flat-Leaf Parsley, Chopped, to Garnish
Method
Preheat your oven to 180°C (350°F).
Begin by heating a generous drizzle of olive oil in a large skillet over medium heat. Sauté the chopped onion until it softens, then add the minced garlic.
Add half of the chorizo slices and the chopped serrano ham, allowing it to cook for a few minutes until the chorizo starts to release it's oils and the ham starts to look crispy.
Pour the tomatoes into the skillet along with the red wine vinegar. Stir well and allow the mixture to simmer until it thickens, which should take about 15 minutes.
Season with salt and freshly ground black pepper to enhance the rich flavours.
In the last few minutes of cooking the tomato base, add the teaspoon of honey, then toss in the frozen peas, stirring until they are heated through.
Then, create small wells in the thick sauce and crack an egg into each well. Add the rest of the chorizo slices and strips of roasted pepper on top.
Once the skillet is prepared, transfer it to the oven and bake for roughly 10-15 minutes, or until the eggs are cooked to your desired doneness.
Garnish your Flamenco Eggs with freshly chopped flat-leaf parsley. This adds a pop of colour and an aromatic freshness that enhances the overall dish.
