½ cup honey
1 tsp crushed red pepper, plus more for topping if you like heat
2 x store-bought pizza bases
2 tbsp butter
Olive oil
2 large leeks, sliced into rings
2 cloves of garlic, finely minced
Flaky sea salt
250g ricotta
100g feta
Grated mozzarella cheese
Fresh thyme leaves, for topping
Balsamic glaze (optional)
Method
Preheat your oven according to the temperature specified on your pizza base packaging. A hot oven is crucial for achieving that nicely crisped crust.
In a large pan, melt the butter, and add the sliced leeks and minced garlic. Sauté them over medium heat until they are soft and golden brown. Sprinkle with kosher salt as they cook. This process should take about 10-15 minutes.
