What is Porchetta?
Porchetta is a beloved Italian tradition that involves roasting a whole pork, usually seasoned with garlic, herbs, and spices. This dish is known for its crispy exterior and succulent interior, making it a popular choice for celebrations. While it's traditionally served as a centrepiece, it can also be enjoyed in a smaller format, like a gourmet burger!

Gourmet Porchetta Burger and Pistachio Pesto - The Recipe
To make a juicy Gourmet Porchetta Burger and Pistachio Pesto, gather the following ingredients:
Burger Ingredients:
500 grams of ground pork (choose a cut with about 20% fat for optimal flavour)
2 tablespoons of fresh rosemary, finely chopped
2 tablespoons of fresh sage, finely chopped
3 cloves of garlic, minced
2 teaspoon finely chopped fennel seeds
1 teaspoon of freshly grated lemon zest
1 teaspoon of salt
1 teaspoon of freshly ground black pepper
1/4 cup of panko breadcrumbs
1 egg
Pesto Ingredients:
1 cup of unsalted shelled pistachios
1-2 cloves of garlic (adjust according to your taste)
2 ½ cups of fresh basil leaves, washed
½ cup of freshly grated Parmigiano cheese
¼ cup of freshly grated pecorino cheese
½ cup of extra virgin olive oil (you may need a bit more for desired consistency)
Salt and black pepper to taste
Method:
Combining the burger ingredients together in a large bowl until well blended. To ensure juicy, tender burgers, be careful not to over mix Form the mixture into about four patties.
Pop in the fridge for 10 to 15 minutes to firm up.
While the burgers are firming in the fridge, make your pesto. Blend all the pesto ingredients in a food processor until smooth. Adjust the texture by adding more olive oil if needed.
Remove your burgers from the fridge. Preheat a grill or skillet over medium-high heat. Cook the patties for 5-7 minutes on each side or until they reach an internal temperature of 70°C / 160°F and are well-browned.
Remove the burgers to a plate to rest whilst you lightly toast your burger buns until golden. Spread a generous amount of pesto on the bottom half of each bun. Add a burger to each bun and top with more pesto. Place the other half of the burger on top and enjoy!
