Have you ever stumbled upon an ingredient that completely changes your cooking game? That was my experience with black lime, which brought a whole new dimension to my grilled halloumi dish. Intrigued by the unique taste of grilled Nabulsi cheese paired with Persian black lime honey at the Queen of Cups in Glastonbury, I knew I was going to race home and try to recreate this using Halloumi. I'm not claiming that this is the dish that I had, but this is my version that I wanted to share with you.

Exploring the Flavours
The beauty of this Grilled Halloumi with Black Lime Honey Dressing dish lies in its balance of flavours. The salty, slightly squeaky halloumi contrasts perfectly with the sweetness of the honey and the tang provided by the black lime.
Grilling the halloumi not only produces a delicious caramelized crust, but it also intensifies its creamy texture. The black lime, with its unique flavour, adds an essential depth. The acidity from the lime juice cuts through the richness of the cheese, keeping the dish bright and refreshing.
I must admit, I had never heard of black limes before. They are odd looking things, but they are used a lot in Middle Eastern dishes to bring out a really zested lime flavour. Removing one from the pot, I pondered how I was going to grind this hard, dry looking black fruit. Opting for a grater first and failing, I resorted to a good whack from a wooden rolling pin, resulting in the lime collapsing in to a powdery, dry heap quicker than a disintegrated Mummy, ... Not that I've seen a Mummy disintegrate, but I've seen enough movies to get the image! So now we have Black lime powder, on with the recipe ...
Grilled Halloumi with Black Lime Honey Dressing - The Recipe
Ingredients
1 Block of halloumi, spilt in half through the middle, length ways
1 Black lime, based to smithereens
1/4 cup of honey
Juice of half a lime
1/4 cup of olive oil
Method
Griddle halloumi until golden on both sides
Meanwhile in a small saucepan, melt the honey and add the lime juice, olive oil and black lime and heat through gently.
Place the griddled halloumi on a serving dish and pour over the warm black lime honey dressing
