Evaporated Milk Porridge with Caramelised Apples and Nuts - The Recipe

For the Caramelised Apples & Nuts

  • 1 eating apple, quartered and cored, then thinly sliced

  • A handful (about ¼ cup) of mixed nuts, such as walnuts and almonds

  • 25g (approximately 2 tablespoons) butter

  • 2 tablespoons soft light brown sugar

  • 1 tsp ground cinnamon

For the Porridge

  • 1 ¾ cups water

  • 1 cup rolled oats

  • 1 cup evaporated milk

  • ¼ cup honey (adjust to taste)

Method

Cooking the Caramelised Apples and Nuts

Start with the caramelised apples and nuts. They add a delightful sweetness and crunch to your porridge.

  1. In a frying pan, melt the butter over medium heat.

  2. Once melted, add the sliced apples and sauté for about 3-4 minutes until they soften.

  3. Sprinkle the soft light brown sugar over the apples. Continue cooking for another 2-3 minutes, stirring occasionally. The sugar will melt, creating a rich caramel sauce that coats the apples.

  4. Add the mixed nuts to the pan and stir to combine. Cook for one more minute until the nuts are heated and slightly toasted.

  5. Remove from heat and set aside.

Making the Porridge

Now that your caramelised apples and nuts are ready, let’s prepare the porridge.

  1. In a saucepan, bring the water to a boil over medium-high heat.

  2. When boiling, reduce the heat to medium-low and add the rolled oats. Stir occasionally to prevent them from sticking.

  3. Monitor the water level to avoid boiling over.

  4. When most of the water is absorbed, pour in the evaporated milk. Stir well and let the mixture come to a low boil, cooking for about 2-3 minutes until it thickens.

  5. Add honey to taste, stirring to combine. Cook for an additional 2-3 minutes before removing from heat.

You’ll end up with a creamy, rich porridge that serves as a perfect foundation for your caramelised apples and nuts.
