Chipotle Honey Chickpea and Black Bean Burrito - The recipe


Ingredients:


  • ½ cup of mayonnaise

  • ½ cup of chipotle & honey dressing

  • 4 large flour tortillas

  • 1 pack of microwave lime and coriander rice

  • ½ tin of black beans (about 7.5 oz)

  • 1 tin of chickpeas (about 15 oz)

  • A good handful (about 1 cup) of grated cheddar cheese

  • 1 diced tomato

  • 1 diced avocado

  • Juice of 1 lime

  • ½ diced red onion

  • A handful of roughly chopped coriander (about ¼ cup)


With these ingredients, you'll have a delicious meal ready in just a few minutes!


Method


  1. Preheat your oven to 200 C / 400F


  2. Begin by cooking your lime and coriander rice as per the package instructions—this rice provides a flavourful foundation for your burrito.


  3. Combine the mayo and chipotle & honey dressing together in a bowl


  4. Meanwhile, drain and rinse your chickpeas and black beans and add to a large bowl.


  5. Chop up the tomatoes, avocado, and red onion and add this to the bowl, along with the fresh coriander and lime juice and stir to combine. These fresh ingredients add vibrant colours and tons of flavour to your burrito.


  6. Tip the cooked rice into the bowl, add the grated cheese and Chipotle & Honey Mayonnaise and give everything a cook stir.


  7. Now that all your ingredients are prepped, it's time to assemble your burrito:

    Spoon a layer of the filling down the centre of a large flour tortilla


  8. Now, carefully roll up the tortilla, tucking in the sides as you go to keep all the tasty fillings securely inside.


  9. Once your burritos are rolled, place on a greaseproof paper lined tray and bake in the oven for 10 to 15 minutes
