As autumn arrives and the leaves change colour, it’s the ideal time to embrace the season's flavours. Every month I like to showcase a trending flavour in the cocktail world in my monthly newsletter. As we slip into Autumn, the flavour on the tip of everyone's tongue for 2025, are elegant Pear and the warming, spicy herbaceous notes of rosemary. I decided to waste no time in trying this gorgeous sounding combination in a Pear and Rosemary Gin Fizz, to bring a refreshing and elegant touch to your drink collection.

The Allure of Pear and Rosemary

Pairing pear with rosemary creates a wonderful harmony. The juicy sweetness of the pear balances the herbaceous notes of rosemary, resulting in a drink that feels both refreshing and comforting. This combination resonates particularly well in fall, as it echoes the spirit of harvests and cosy gatherings.

The Pear & Rosemary Gin Fizz isn't just a drink; it offers an experience. Its fizzy nature, combined with aromatic herbs, makes it ideal for any autumn occasion ... Perfect for sipping while you enjoy a chilly evening, perhaps wrapped in a warm blanket or gathered with friends around a fire pit, or maybe an elegant gathering. The unique balance of flavours in your cocktail is what makes it stand out. The pear syrup's sweetness, the warming, spicy rosemary, and the effervescence of prosecco create a delightful medley that is refreshing and comforting.

Crafting the Pear Syrup

Beginning with a flavourful pear syrup is essential for our cocktail. This syrup infuses the drink with delightful pear essence, providing a sweet foundation. I'll be honest, I wandered around and around the supermarket looking for pear juice or syrup, to no avail, so I grab a cheat in the version of a tin of pear, creating a syrup combining equal quantities of sugar, with equal fluid quantities from the juice in the tin.

Ingredients for Pear Syrup

  • 1 tin of pears (approximately 400 grams)

  • Granulated sugar (equal parts to the pear juice)

  • 2 sprigs of fresh rosemary

Instructions

  1. Prepare the Pear Juice: Open the tin of pears and measure the juice, which is usually around 250ml.

  2. Combine Ingredients: In a saucepan, mix the pear juice with an equal amount of granulated sugar. For example, if you have 250ml of pear juice, add 250g of sugar.

  3. Add Pears and Rosemary: Chop the pears and add them to the saucepan. Toss in the two sprigs of rosemary too.

  4. Heat the Mixture: Warm the mixture over low heat, stirring until the sugar dissolves completely. It should take about 5 minutes.

  5. Infuse and Cool: Remove from heat and allow it to cool for about 15 minutes. This infusion method enhances the flavour profile of your syrup.

Now that the syrup is ready, let’s bring the cocktail to life!

Assembling the Pear & Rosemary Gin Fizz

With the syrup prepared, you are almost ready to enjoy this splendid drink.

Ingredients for the Cocktail

  • 60ml Pear Syrup

  • 50ml Gin

  • Prosecco (to top off)

  • Pear slices (for garnish) (I like to roast mine, to give them a prettier look)

  • A sprig of rosemary (for garnish)

Instructions

  1. Fill a Glass with Ice: Grab a tall glass and fill it with ice cubes to keep your cocktail cool.

  2. Add the Pear Syrup: Pour 60ml of your pear syrup over the ice.

  3. Pour in the Gin: Next, add 50ml of gin to the glass, bringing in that delightful botanical flavour which enhances the overall taste.

  4. Top with Prosecco: Carefully top off the drink with prosecco, about 100ml, allowing the bubbles to add a celebratory fizz to your cocktail.

  5. Garnish: For the final touch, garnish with pear slices and a sprig of rosemary. This will elevate the drink’s presentation and aroma.
