I originally discovered this idea whilst scrolling through Instagram one day, but the strawberries were baked in puff pastry, but I wanted to take this idea down a different route. Instead of puff pastry, my recipe uses a biscuit dough that’s sweetened just enough to feel like a treat without being overwhelming. The result is a biscuit with a delicate crumb and a hint of vanilla, topped with a fresh strawberry slice and a sprinkle of sugar that caramelizes in the oven.

These Strawberry Sugar Biscuits are versatile. You can enjoy them plain, or serve them with layers of sweetened strawberries, custard, and whipped cream for a dessert that’s both elegant and comforting. It’s a playful twist on a classic strawberry shortcake, but with a biscuit that has a satisfying snap.


Strawberry Sugar Biscuits - The Recipe


  • Small punnet of strawberries, sliced lengthways

  • 100g (3½oz) unsalted butter, softened at room temperature

  • 100g (3½oz) caster sugar, plus extra for sprinkling

  • 1 medium free-range egg, lightly beaten

  • 1 tsp vanilla extract

  • 275g (9¾oz) plain flour



Step-by-Step Baking Instructions


  1. Preheat your oven to 190C (170C Fan/Gas 5). Line a baking tray with baking paper to prevent sticking.

  2. Cream the butter and sugar in a bowl until they combine into a smooth, fluffy mixture.

  3. Beat in the egg and vanilla extract gradually, making sure everything is well mixed.

  4. Stir in the plain flour and bring the mixture together to form a dough. It will be soft but manageable.

  5. Lightly flour your work surface and roll the dough out to about 1cm (½ inch) thick.

  6. Use biscuit cutters to cut out your biscuits. Place each biscuit on the baking tray.

  7. Lay a slice of strawberry in the middle of each biscuit and sprinkle a little caster sugar over the top. This sugar will caramelize and add a lovely crunch.

  8. Reroll any leftover dough to cut out more biscuits.

  9. Bake for 8 to 10 minutes, or until the biscuits turn a pale golden brown. Keep an eye on them as oven temperatures can vary.

10. Let the biscuits firm up on the tray for 2 minutes before transferring them to a wire rack to cool completely.

  • Use fresh, ripe strawberries for the best flavour and juiciness. Slice them lengthways to get a nice, flat surface that sits well on the biscuit.

  • Don’t overwork the dough. Mix just until it comes together to keep the biscuits tender.

  • Watch the baking time carefully. The biscuits should be pale golden, not dark brown. Overbaking will dry them out.

  • Serve with extras like sweetened strawberries, custard, or whipped cream to turn these biscuits into a show-stopping dessert.
