Why Hibiscus and Rose Tea?

Hibiscus and rose are cherished not only for their vibrant aromas but also for their health benefits. Hibiscus tea contains antioxidants, which can help boost your immune system. Studies show that hibiscus may lower blood pressure when consumed regularly, offering a simple way to support your health. Meanwhile, rose petals add a delicate flavour that has been enjoyed in various cultures for generations. Together, they create a jam that is as tasty as it is good for you.

Using Good Earth's Hibiscus, Rose & Sweet Berries Tea Bags enriches this jam. The tea adds natural sweetness and a unique flavour that makes it great for not just toast but also desserts and breakfast treats like porridge or yogurt.

Hibiscus and Rose Tea Plum Jam - The Recipe

Ingredients

To prepare your Hibiscus & Rose Tea Plum Jam, gather these ingredients:

  • 2 kg ripe plums

  • 125 ml hot water

  • 3 Good Earth Hibiscus, Rose & Sweet Berries Tea Bags

  • ½ kg granulated sugar

  • ½ tablespoon (30 ml) lemon juice

Fresh, ripe plums are key to this recipe. Their natural sweetness complements the floral infusion.

Method

Put 2 small plates in the freezer, this is to taste the setting point later.

Preparing the Hibiscus and Rose Tea

Start by steeping the tea bags in 125 ml of hot water. Allow the tea to cool while you work on the plums. The aroma that fills your kitchen will enhance the anticipation for the flavour to come.

Ensure you steep your tea long enough to get all the rich flavours without overdoing it. A steeping time of about 10-15 minutes should do the trick.

Preparing the Plums

While your tea is steeping, halve and pit your plums. Look for plums that are ripe but still firm. They should be sweet and slightly tart, creating a perfect balance when mixed with the tea.

Cooking the Jam

With your tea steeped and plums ready, it's time to combine them. In a large pot, mix the plums, cooled tea, and sugar. Stir well to start dissolving the sugar.

Heat the mixture on medium, stirring frequently. The plums will release their juices, creating an aromatic concoction. Cook for about 20 to 30 minutes. You want a soft set, which is ideal for spreading. If you prefer a thicker jam, extend the cooking time a little.

Testing for a Soft Set

To know if your jam is ready, drop a small spoonful onto a cold plate. Wait a moment, then run your finger through it. If the jam stays in place and does not quickly run back together, it is perfect for jarring.

Once your jam reaches the right consistency, it’s time to jar it. Carefully pour the hot jam into sterilized jars while it’s still bubbling. Seal them right away.

Allow the jars to cool completely before storing them either in the refrigerator or the pantry. Since this is a soft set jam, it’s best kept in the fridge and will stay fresh for up to three weeks.

Creative Ways to Use Hibiscus & Rose Tea Plum Jam

This jam is versatile and can be used in many delightful ways:

  1. Ice Cream Swirl: Its soft texture is perfect for blending into vanilla or hibiscus-flavoured ice cream, creating a fruity and colourful dessert.
