What started as a simple plan to bake an almond-based apple crumble tart with mascarpone and cream cheese filling turned into a kitchen adventure fuelled by a sudden rainstorm and a missing ingredient. Yet, this twist of fate led to a delicious discovery that I’m excited to share.

The Unplanned Beginning


The original idea was straightforward: create a tart with a crunchy almond crumble topping, paired with a smooth mascarpone and cream cheese filling, and tart apples. I had my shopping list ready, with ground almonds as the star ingredient. But the weather had other plans.


A sudden unexpected torrential downpour transformed the car park into a small lake, leaving my car stranded and surrounded by water. After a mini rescue mission to get home safely, I realized I had forgotten the one thing I went to the supermarket for—ground almonds.


At first, this felt like a disaster. But sometimes, mistakes in the kitchen lead to the most memorable dishes.


Why Spelt Flour Works Better Than Almonds


Without ground almonds, I had to improvise. I reached for spelt flour, a less common but wonderfully flavourful alternative. Spelt flour has a nutty taste that reminded me of digestive biscuits, which surprisingly complemented the tart’s other ingredients perfectly.


Here’s why spelt flour worked so well:

Mascarpone Spelt Apple Crumble Tart - The Recipe


For the Crumble


2½ cups spelt flour (300g)

¼ cup granulated sugar (50g)

½ teaspoon ground cinnamon

1 teaspoon baking powder

½ teaspoon kosher salt

140g cold butter, diced (slightly increased from the original recipe)

2–3 tablespoons cold water

For the Filling

225g mascarpone, room temperature

225g cream cheese, room temperature

150g granulated sugar

2 large eggs, room temperature

1 teaspoon vanilla extract

1 tablespoon apple cider vinegar

2 large Granny Smith apples, peeled if preferred and thinly sliced

Method


Preheat the oven to 170°C fan (190°C conventional). Grease and line a 23cm springform tin.

In a large bowl combine the spelt flour, sugar, cinnamon, baking powder and salt.

Rub in the cold butter until the mixture resembles coarse crumbs. Add the water a tablespoon at a time until the mixture just begins to clump when squeezed in your hand.


Set aside roughly two-thirds of the crumble mixture for the base and reserve the remaining third for the topping.


Press the larger portion of crumble firmly into the base and slightly up the sides of the tin.


Beat together the mascarpone, cream cheese and sugar until smooth.


Add the eggs one at a time, then mix in the vanilla and apple cider vinegar.


Pour the filling over the base and smooth the surface.


Arrange the sliced apples evenly over the filling.


Scatter the remaining crumble over the apples.


Bake for 50–60 minutes until the crumble is golden and the centre has a slight wobble.


Allow to cool completely before removing from the tin.


Dust generously with icing sugar before serving.
