New Potato Fajita Wraps - The Recipe
Ingredients:
8 - 10 New Potatoes (Depending on Size)
2 bell peppers, cut into strips
1 red onion, sliced into strips
1 small tin of sweetcorn, drained
1 packet of fajita seasoning
Olive oil
Sour cream & chives
Soft tortilla wraps
Grated cheddar cheese
Fresh coriander
Method:
Preparing the New Potato Fajita Wraps
Step 1: Boil the Potatoes
Begin by washing and boiling the new potatoes until soft. This process typically takes about 15-20 minutes. Once tender, drain them and let them cool before cutting them into chunky slices
Step 2: Sauté the Vegetables
While the potatoes are cooking, heat a splash of olive oil in a large skillet over medium heat. Add the sliced red onion and peppers. Sauté them for about 5-7 minutes until they become soft and slightly caramelized.
Step 3: Add the Fajita Seasoning
Once the vegetables are ready, mix in the boiled potatoes and sweetcorn along with the fajita seasoning. Stir until everything is evenly coated. Continue to cook for another 5 minutes to allow the flavours to blend nicely.

Take a soft tortilla wrap and spoon a generous amount of sour cream & chives down the centre of the wrap. Add a nice portion of the potato-vegetable mixture on top. Add a sprinkle of grated cheese and coriander on top. Finally, roll the wrap tightly, and it's ready to relish.
