  • 1.5 kg mussels, cleaned and de-bearded

  • 1 tbsp olive oil

  • 4 cloves garlic, sliced

  • 2 tins of cherry tomatoes (about 400g each)

  • 1 cup dry white wine (approximately 240ml)

  • 2 tbsp parsley, chopped

  • Juice of 1 lemon

  • 50g feta cheese, crumbled


Each ingredient contributes uniquely to the dish. The cherry tomatoes bring a burst of sweetness that balances the brininess of the mussels, while the dry white wine infuses the sauce with depth and complexity.


Preparing the Mussels


  1. Cleaning the Mussels: Start by rinsing the mussels under cold water. Use a brush to scrub the shells thoroughly. If you find any open mussels, give them a gentle tap. Discard any that do not close, as they might not be fresh.


  2. Cooking the Base: In a large pot or deep skillet, heat the olive oil over medium heat. Once hot, add the sliced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it.


  3. Adding the Tomatoes: Stir in the cherry tomatoes and let them bubble for a few minutes. This will create a flavourful base for your dish, marrying sweetness and acidity.


  4. Incorporating the Wine: Pour in the dry white wine, letting it simmer for another 3-4 minutes. The heat will cook off the alcohol, leaving a rich taste that complements the mussels wonderfully.


  5. Adding the Mussels: With the sauce simmering, gently add the cleaned mussels to the pot. Cover with a lid and steam for about 5-7 minutes. You’ll know they’re ready when all the mussels have opened. It's important to discard any that stay closed.


  6. Finishing Touches: After the mussels are cooked, squeeze the juice of one lemon over the dish and sprinkle with fresh parsley. These final touches enhance the overall flavor profile of the dish.
