       Something Quick ...

Quick doesn't have to mean compromising on flavour.

Here you'll find recipes for busy evenings, lazy lunches, unexpected hunger and those occasions when you've looked at the clock and thought:

“Oh. We need to eat.”

So grab a pan and let's get on with it.

Something Quick

Sometimes dinner needs to happen fast. Not necessarily 20-minutes-or-less, stopwatch-on-the-worktop fast ... just fast enough that you don't find yourself wondering whether ordering a takeaway would have been easier.

These are the recipes for quick-thinking cooks, hungry people and evenings when nobody really planned dinner.

A hot pan, a few good ingredients and you're on your way.

Because quick food doesn't have to mean boring food.

Tips & Suggestions

Read the recipe first. ... It sounds obvious, but knowing what needs to happen next saves precious minutes, especially when you're already hungry.

 

Get everything out before you start.


A quick rummage through the fridge halfway through cooking isn't quite so quick. A little preparation at the beginning can make the whole thing flow.

Let your oven, kettle and hob work for you.


Put the kettle on while you chop, get the pan heating before you're ready for it and preheat the oven before you start assembling.

 

Don't underestimate the store cupboard ... Tinned tomatoes, beans, pasta, stock, spices and a few good condiments can turn “there's nothing in” into dinner surprisingly quickly.

 

Use shortcuts without apology.
Pre-prepared ingredients aren't cheating. If somebody else has already peeled, chopped or cooked something, you've just saved yourself time.

Look for the things that cook while you do something else.  A pot simmering away or something roasting in the oven gives you a few precious minutes to make a drink, put your feet up or remember what day it is.

And don't make more washing up than necessary. One pan is good. Two pans is acceptable. If we're heading towards six, we've probably lost the plot.

Jo's Kitchen Note ...

I don't mind spending time in the kitchen when I'm in the mood for it.  But there are plenty of evenings when I want to make something delicious, eat it and get on with my life.

These are the recipes for those days ... And if I can get dinner on the table while only creating three things to wash up, I'm calling that a win.
