Whether you're vegetarian, cooking for someone who is, trying to eat a little more plant-based food or simply found some particularly beautiful vegetables at the market, you'll find plenty here to inspire you.
Vegetables aren't the side show.
They're invited to be the main event.


Something Vegetarian
Vegetables don't need to be the supporting act.
From hearty suppers and comforting bowls to colourful salads, pies, pasta and things worth putting in the middle of the table, these are recipes where vegetables get to take centre stage.
You don't have to be vegetarian to enjoy them. In fact, I think some of the best vegetable recipes are the ones where nobody notices what's missing because they're too busy enjoying what's there.
Good vegetables, plenty of flavour and absolutely no sad little side salad in sight.

Tips & Suggestions
🌿 Let vegetables do the talking.
Choose good seasonal produce and give it the attention it deserves. Roasting, grilling, charring and slow cooking can bring out flavours you don't always get from simply boiling or steaming.
🌿 Think about texture.
A good vegetarian dish doesn't need to be soft all the way through. Try combining creamy, crunchy, crisp and chewy elements to make the meal more interesting.
🌿 Don't forget umami.
Miso, Parmesan, mushrooms, tomatoes, olives, roasted garlic and good vegetable stock can all add that deep savoury flavour that makes a vegetarian dish feel properly satisfying.
🌿 Make friends with pulses.
Beans, lentils and chickpeas are brilliant for adding substance, texture and protein ... and they're particularly handy when you're trying to make a meal stretch a little further.
🌿 Cheese is your friend.
A little feta, goat's cheese, cheddar, Parmesan or Halloumi can transform a dish. Just remember that some cheeses aren't vegetarian, so check the label if that's important to you.
🌿 Season boldly.
Vegetables can handle herbs, spices, chilli, citrus, garlic and plenty of black pepper. Don't be frightened of flavour.
🌿 And don't think you need to be vegetarian ... A good vegetable recipe is simply a good recipe. You don't need to leave the meat aisle permanently to enjoy it. 😉



Jo's Kitchen Note ...
I'm not interested in vegetarian food that feels like an apology. If we're having vegetables, let's make them delicious.
I want colour, texture, something creamy alongside something crisp, plenty of seasoning and enough going on that nobody is sitting there wondering where the chicken is.
And if a recipe happens to make a committed carnivore go back for seconds ... I'll take that as a compliment.
