Refreshing Blackberry Mangelwurzel and Hibiscus Spritz Recipe for Summer

The drink I nearly didn't make ... This drink almost never existed, but then ...

While making my Blackberry & Mangelwurzel Jelly ( Deliciously Unique Blackberry and Mangelwurzel Jelly Recipe to Try ), I found myself standing over a pan of the most beautiful ruby-red juice I'd ever made. It seemed almost criminal to watch every last drop disappear into the preserving pan. So I quietly poured 100ml into a jug.


No plan.

No recipe.

Just curiosity.


What followed was one of those lovely afternoons where one experiment led to another. A strong hibiscus, rose and berry tea brought gentle floral notes, cloudy apple juice rounded everything together, a drizzle of honey softened the edges and a splash of sparkling water turned it into something wonderfully refreshing.


I served it in a chilled coupe with nothing more than a blackberry balanced on rosemary.


Simple.

Elegant.

Unexpected.


If you're feeling celebratory, replace the soda water with prosecco and it becomes a wonderfully grown-up summer spritz.


Blackberry, Mangelwurzel & Hibiscus Spritz

Serves: 2


Ingredients

  • 100ml reserved Blackberry & Mangelwurzel juice

  • A generous squeeze of honey

  • 100ml strong Hibiscus, Rose & Berry tea (cooled). I used 2 tea bags.

  • 50ml cloud apple juice

  • Soda water to top

  • Ice


Optional

Swap the soda water for chilled prosecco.


Garnish

  • Fresh rosemary sprig

  • Blackberry


Method


  1. Brew the tea until beautifully strong and allow it to cool


  2. Stir together the blackberry & mangelwurzel juice, tea, honey and cloud apple juice.


    Fill a cocktail shaker or jug with ice and chill well.


  3. Strain into chilled coupe glasses.


  4. Top with soda water (or prosecco).


  5. Garnish with a blackberry resting on a rosemary sprig.


Flavour Notes


The blackberry provides the fruit.

The hibiscus brings floral brightness.

The cloud apple juice softens everything.

The rosemary adds an aromatic woodland note.

The mangelwurzel quietly sits in the background adding an earthy depth that's difficult to identify—but impossible to ignore once you know it's there.

This Blackberry Mangelwurzel and Hibiscus Spritz only exists because I was making my Blackberry & Mangelwurzel Jelly and couldn't bear to lose that beautiful juice, and I think I have created something really rather lovely.


If you're making the jelly, reserve 100ml before adding the sugar and make this first.

I have a feeling you'll be very glad you did.
